Ingredients for 1 cake:
200 ml maple syrup
200 ml of sunflower oil
4 organic eggs
300 g rice flour
85 g tapioca flour
85 g potato flour
2 teaspoons of cinnamon powder
½ teaspoon grated nutmeg
½ teaspoon ginger powder
2 teaspoons of baking soda
2 teaspoons of baking soda
4 large carrots
400 g pineapple
250 g walnuts
Some butter
Preparation:
1. Preheat the oven to 180 ° C. Butter a round baking pan.
2. Mix together the syrup, oil and eggs and beat until frothy.
3. Then mix all the dry ingredients and add the syrup mixture.
4. Peel the carrots and grate finely. Dice the pineapple. Chop
the nuts into small pieces. Then add everything to the dough and
mix thoroughly.
5. Pour the batter into the mold and bake in the oven for about
55 minutes. Then let it cool down in the mold for another 10
minutes.
