Ingredients for 4 servings:

250 ml lactose-free cream
250 ml coconut milk
1 organic lime
40 g of sugar
4 sheets of gelatin
½ pineapple

Preparation:

1. Soak the gelatin in water.

2. Mix the cream, coconut milk and sugar in a saucepan and
heat slowly.

3. In the meantime, rinse the lime with hot water and grate the
peel finely, squeeze out the juice of ½ lime. Then add the lime
juice and lime zest to the cream, stir in and let cool down a
little.

4. Rinse four dessert bowls with cold water and fill them with
cold water.

5. Press the gelatine into the cream and coconut milk mixture
and stir. Pour the water out of the bowls and spread the cream
in them. Put the bowls in the refrigerator for 4-5 hours.

6. Peel the pineapple and cut into fine slices. Lay out the slices
on dessert plates. Then turn the panna cotta onto the pineapple
slices and enjoy.
