Mediterranean nuggets with vegetables
Preparation time 20 minutes
Ingredients:
· 2 slices of white bread (old, in pieces)
· 1 tablespoon paprika powder (hot)
· 1 tablespoon olive oil
· 1 egg yolk
· 1 egg white
· 250g chicken breast (in pieces)
· 1 clove garlic
· Freshly ground pepper
· 2 tsp red pesto
· Fresh parsley (smooth, finely chopped)
Preparation:
1. Use a food processor to process the white bread and paprika
powder into a crumbly mass. Then stir in the olive oil.
2. Then puree the chicken breast fillet using the food processor
and mix it with the garlic, parsley, pesto and egg yolk. Then
season this mixture with salt and pepper.
3. Now shape about 10 balls out of this mixture and press them
flat to make nuggets.
4. Now beat the egg whites in an extra bowl and turn the
nuggets in it.
5. To bread the vegetable nuggets, please turn them in
breadcrumbs.
6. Then put them in the basket of your air fryer and fry them
for 10 to 12 minutes at 200 degrees.
These Mediterranean vegetable nuggets taste best with a fresh, green
salad or French fries.
Tip: You can also convert the Mediterranean vegetable nuggets into
Italian nuggets: Instead of red pesto, use green pesto and freshly grated
parmesan.
